Oats for brekkie 3 ways

Does anyone else really love a big bowl of porridge? But then after a week or so absolutely despise that bowl of porridge, because the thought of eating the same thing over and over again (there are exceptions.....cake) makes you feel so sick and bored with life?!

Well, even if that's not the case, these 3 lovely, very simple recipes with oats will add some variety into your morning breakfast routine and there are just so many variations you can try yourself. By changing up the fruit to whatever is seasonal, and playing around with nuts and seeds that make your taste buds tingle. Toasted Oats For 2 with Apple compote and Goat's yoghurt

  • 2 handfuls of jumbo organic oats
  • 1/2 tsp fennel seeds
  • 1 handful flaked unsweetened coconut
  • 4 Apples cored and diced to chunks ( 2 varieties at least)
  • handful of your preference nuts (we used pecans)
  • Goats yoghurt

To make the compote add the diced apples to a medium saucepan and add a few splashes of water. Pop onto the stove top over a lowish heat and stir it occasionally so the apple starts to break down. 

To start the oats you will need a medium hot pan and tip in the fennel seeds, toss them around the pan until you start to smell the toasted aroma then add the oats and nuts and keep moving around (the pan not you). When the contents of the pan is a beautiful golden colour, add in the coconut and wait for that to turn golden as well.

Spoon the oat mix onto 2 bowls. Add a dollop of yoghurt on each. Check on the apple compote, it should have cooked down now to a chunky sauce stage. Add on a couple of dollops to each plate and Tadah! 

The Oatie Smoothie for 2

  • 2 x pears
  • 1 x large banana
  • 1 tbsp local honey
  • 3 tbsp Goat's yoghurt
  • 1 Handful jumbo organic oats plus some for sprinkling
  • splash of milk to loosen

Bung everything into a food processor/blitzer except the milk. Blitz for about 20 seconds and pour into 2 glasses. If too thick for you then add that splash of milk before pouring. Add the sprinkle of oats to the glasses and I must say, a straw seems to make it taste even better?

Overnight Oats for 2

  • 1 x Apple grated
  • 1 Small handful of dried fruit
  • 100g jumbo organic oats
  • 250ml full fat/semi milk
  • 2 x bananas/handful of berries

Put all the ingredients except the bananas/berries, into a tub or bowl and pop in the fridge overnight.

In the morning, help yourself to a big helping and top with fruit of your choice plus any nuts or seeds you may want.
